How To Make Traditional Uzbek Plov In Kazan Over Fire | Recipe

Plov is an Ouzbek dish traditionally make in kazan over fire. This delicious recipe is very popular in Middle Asia.
Recipe for around 10 peoples.

STEPS OF THE RECIPE :

STEP 1 :
– Add sunflower oil in a large kazan over fire
– Add 400g of lamb fat
– When the pieces of fat turn golden, remove them from the heat and keep it aside
– Add 500g lamb bones
-When the pieces of lamb bones turn golden remove them from the heat and keep it aside
-Add 1.2kg of lamb meat
-When the pieces of lamb meat turn golden remove them from the heat and keep it aside
-Add 800g of onions
-Add 1kg of carrots
– Add 500g of chickpeas – the chickpeas need to be soaked-
-Add the lamb fat, the lamb bones and the lamb meat
– Add 2 tbsp of powder cumin
– Add 1/2 tbsp of salt
– Add 1/2 tbsp of powder black pepper
– Add 1 tbsp of cumin seeds
– Add 1 tbsp of powder coriander
– Add 3 liters of water

COVER AND COOK IT FOR 30 TO 40 MINUTES

STEP 2 :
– Wash 3 times 1kg of round rice
-Add 2 full garlics
– -Optional- Add 1 to 3 spicy green piments

COVER AND COOK IT FOR 10 MINUTES

STEP 3 :

– Add the rice to the kazan

COVER AND COOK IT 30 MINUTES
